As Super Bowl party plans are taking shape, I'm going through party food recipes. Both of these are proven winners - easy to make in large quantities, and they also freeze very well.
GIGI’S COCKTAIL PIZZAS
1 lb. hot sausage
1 cup chopped onion
½ cup grated sharp Cheddar cheese
½ cup Parmesan cheese
1 tsp. garlic salt
8-oz. can tomato sauce
6-oz. can tomato paste
3 cans refrigerated flaky biscuits
Crumble, fry and drain sausage. Add next 7 ingredients to sausage; stir to mix. Separate each biscuit into 3 rounds and place rounds on cookie sheets. Spread each round with mixture and freeze on cookie sheets. Once frozen, transfer to plastic freezer bags and store in freezer; when ready to use, bake at 425 degrees for 10 minutes.
MOM'S SPICY SAUSAGE RYES
1 lb. unseasoned sausage
1 lb. Velveeta Mexican cheese
Party rye bread
Brown and drain sausage. Add cheese; melt and stir until well-mixed. Spread on party ryes and freeze on cookie sheets. Store in freezer bags. To serve, bake at 425 degrees for 10 minutes or until bubbly.
